Roasted baby carrots are one of my favorite side dishes to have. I can have it with any meat or fish. I just love having a delicious and easy to prepare dish such as this, not to mention, the nutrients that you get from the carrots. It’s a healthy side dish, for sure.
One of the things that I also love about baby carrots is the fact that I don’t need to cut them anymore when preparing this dish. Not unless I use them in a sautéed dish, then that is the only time that I cut them in half.
Here’s how I prepared these roasted baby carrots if you want to give it a try yourself.
Ingredients:
- A bunch of baby carrots
- Extra-virgin olive oil
- salt
- pepper
Instructions:
- Preheat oven to 425°F.
- Line baking sheet with parchment paper.
- Wash carrots, pat them dry and place on lined baking sheet.
- Drizzle and coat with olive oil.
- Sprinkle with salt and pepper.
- Spread carrots out on the baking sheet and bake for 18-20 minutes.
- Enjoy!
Quick, easy, delicious and healthy. What more could you ask for?
