Both the husband and I love corned beef and cabbage. With the celebration of St. Patrick’s Day a few days ago, I thought of preparing it again because it actually had been a while since I had prepared this dish.
To be precise, I prepared it a couple of days before St. Patrick’s Day because I know for certain that we are going to have leftovers. And yes, I had it for three days including St. Patrick’s Day and I really enjoyed it because it was so good!
I have always loved this crock pot or slow cooker version because it is so easy to prepare. I had to tweak the recipe that I found and had to make a smaller portion because it’s only the hubs and I. Yes, it was a smaller portion and yet we still have leftovers. LOL.
Here’s how I prepared it in case you want to give it a try yourself.
Ingredients:
- 1/2 lb of corned beef brisket
- 1 medium sized red onion, chopped
- 10 pieces baby Dutch yellow potatoes, halved
- 1/2 cabbage, cut into wedges
- 1/8 cup parsley
- 3 bay leaves
- 1/2 of the spice mix that came with the corned beef brisket
- 1-1/2 cups of water
Instructions:
- Except for the cabbage, place all the ingredients in a crock pot and cook for 4 hours on high.
- After 4 hours, add cabbage and cook for 1-1/2 hours more.
- Enjoy!
Some people would use beer or beef broth instead of water. I do wonder how using beer would taste like. I’m curious. I may try it next time that I prepared this dish again.
I also added potatoes instead of parsnips and carrots. I just love the combo of cabbage and potatoes.
Don’t that look delicious? Trust me, it tasted as good as it looked!
