Banana pudding is one of my husband’s favorite desserts. Along with blackberry cobbler, those two desserts bring him childhood memories of his Mama June “Bug” and her love of creating delicious desserts. She left behind many of her recipes and hubby has actually mastered making her blackberry cobbler.
My sister-in-law will sometimes prepare banana pudding for a family get-together and you bet, my husband will make sure he makes room for it in his tummy. He’s been craving for banana pudding lately so for the first time ever, we prepared some following a recipe that he found online; ironically, that recipe wasn’t in the ones his mama left behind. He specifically searched for a Southern Banana Pudding, just like what his Mom used to make.
Here’s the finished product. Not bad for a first timer, eh?
I prepared the pudding and I did the layering of the ingredients as well. He, on the other hand, prepared the meringue.
Layering everything was no doubt easy-peasy. Using a quart dish, you place the pudding, then the vanilla wafers, then the sliced bananas. Do it again until you’ve used everything, and top them all with the meringue.
Just put a thin amount of pudding spread at the bottom of the dish so you would have enough as you go layer them all out.
After the hubs got the egg whites thicken enough, I spread it on top of the layers and baked in the oven for only 5 minutes. He wanted it more brown than what it is, but I didn’t mind it just looking light brown like that.
And there’s my plate. It was so good.
The hubs finally had his cravings satisfied and he was a happy camper.
How about you? Do you like banana pudding, too? If you want to prepare some yourself, you can find the recipe that we followed HERE.
Happy Foodie Friday, friends and have a Happy Easter!

I’ve never had banana pudding like this. My daughter used to make banana pudding when she worked at a restaurant. It was so good. It used condensed milk and cool whip. It may have even had cream cheese. I can’t remember exactly. I’ll have to ask her for the recipe.
