Pork Adobo is one of the most popular Filipino dishes and definitely one of my favorites. Adobo is known all over the world. And this is one of those dishes that is so easy to prepare yet so tasty. Just like the Bistek Tagalog that I shared here before, there is no vegetable in this dish, but just meat plus spices and seasonings.
Traditionally, Pork Adobo is cooked without the hard-boiled eggs and I actually prepare it without the eggs sometimes. But I prefer it with hard-boiled eggs most of the time so it is what I’m sharing with you today. My husband and son love it more with hard-boiled eggs too.
You can use any kind of pork meat in cooking Pork Adobo. I don’t know what’s with me using pork chops, but I’ve always preferred using boneless pork chops when I cook pork dishes. I even use pork chops with bones whenever I feel like it.
As you can see, this dish is rich in protein. And for us, it is best served and eaten with steamed rice. Even the husband who is not a big rice eater has always eaten this with rice.
