The following day after enjoying some delicious seafood at The Lobster Trap, the next thing I wanted to do was prepare one of my favorite Filipino dishes – the Pork Afritada or Braised Pork in Tomato Sauce. Like I’ve said many times, I totally miss my native food. Good thing this dish is something that I can prepare whenever I want to because all the ingredients are available at U.S. supermarkets. I haven’t prepared this dish as much as I did though when I was still back home, but this dish remains to be one of my all time favorites.
Like most of my favorite Filipino dishes, the Pork Afritada is easy to make. I think all stews are easy to make. Although you do have to wait for it to simmer for a few minutes, but other than that, it’s easy peasy.
I love the addition of tomato sauce to this dish; it adds a kind of a sweet taste. And of course, the presence of the spices such as the bay leaves make it smell good.
You can actually add green peas in it which I used to do back home, but I skipped it here because I couldn’t find the canned green peas that I like. They do have the frozen ones and you could use them, but adding frozen green peas just didn’t appeal to me.
We usually have the Pork Afritada over rice, but you could have it without the rice too. Whichever way you like it.
For the hubs, stews are perfect for the cold months. For me, it is perfect for any day or any season.
