I’ve always have loved eating any kind of meat, but I have been having this feeling lately that all I want to devour is vegetables. It actually almost feels like I couldn’t swallow a slice or chunk of any kind of meat anymore. A thought of going vegetarian actually went through my mind. I think I just got tired of eating too much meat around here. Both my husband and son are carnivores, and they would eat meat every single day, fried meat specifically. I prefer meat with vegetables stir-fried, but I also love seeing them happy seeing their fried chicken and fried buttered pork chops on the table so I give in whenever they want it.
But that was before. I will have to really cut in preparing fried meat for them. I willprobably just prepare it once or twice a month from now on. You will know why later on. If you remember, one of my goals this year is to eat healthier. And something happened that really made us to go that route 100%. More on that later.
Let’s talk about this delicious Ratatouille first. Have you seen the movie Ratatouille? I loved that film and I have seen it many times. It’s one of those movies that I don’t get tired of watching over and over again.
And this Ratatouille dish is one of those dishes too that I know I won’t get tired of eating over and over again. I came across this recipe from one of the blogs that I visited and just looking at the photos made me drool. I’ve heard of the recipe before, but I’ve never had the urge to try preparing it here at home until I saw her photos. They made my mouth water, I printed her recipe right away.
Trust me, this is really good. But I forgot to put the eggplant on my grocery list, thus, no eggplant in this one. But for the record, I love eggplant. Love this! A bowl of stir fry vegetables makes a very nice lunch, and you could easily serve it up with some rice too.

Honestly I have never heard about Ratatouille before, may be my husband could be aware as he tries different foods during his trips. This looks absolutely delicious & a healthy food to try at home.

I love ratatouille and I make it all the time, especially in the summer when I can pick veggies from our garden! I always add some capers because I think it really cuts through the monotone flavour of the veggies!
