I am all for easy and quick to prepare recipes. As we all know, life can get so hectic sometimes. But I do know when life gets like that, we can always just get a take out or go eat out. But more than anything, other than it is not practical to do any of the two all the time, I have always preferred home-cooked meals more than anything. I grew up having home-cooked meals most of the time and loved it!
Speaking of easy and quick to prepare recipes, when did one-pan dishes start to become a hit? I couldn’t remember when exactly, but I do remember trying it immediately the first time I came across a one-pan recipe. And it was this, one-pan salmon with asparagus. I’ve always loved salmon as well as asparagus – things that both the hubs and I have in common. The little one likes salmon too, but he can be very picky when it comes to vegetables. I hope that will change in the near future. 🙂
I’ve already prepared this dish many times since I came across the recipe and I am still loving it. It’s not only easy and quick to prepare, it’s very delicious too , not to mention very healthy!
I did change the recipe a little bit from the one that I saw. The hubs is in a low-sodium diet so I’m trying to cut sodium in the food that I prepare. With this recipe, I am fine with no salt in it at all. Salmon is already flavorful with only pepper and garlic powder on it. But you can always add salt on it if you desire. The hubs wants a little salt added on his. He loves his salt, but he can’t have as much as he wants like he used to. If your new here, he did have a heart attack in January this year, hence, the low-sodium diet.

Salmon and asparagus are delicious together!! I almost always make asparagus or broccoli as an accompaniment to salmon. I do a quick saute with olive oil, capers, lemon zest, and fresh dill.
