I’m so excited to share this recipe today – a recipe that turned out great despite accidentally adding a different ingredient. Has that happened to you too?
I’ve been wanting to make quiche and then I found this recipe online that really sounded and looked great. But then when the hubs and I went grocery shopping, the hubs picked up the wrong cheese – blue cheese instead of feta. We both didn’t notice it until I was already preparing the dish. But I continued, using the blue cheese, and I surely didn’t regret it because it still end up good.
So yes, this spinach and tomato quiche with blue cheese was born in our kitchen.
I love easy-to-make recipes. Who doesn’t, right? These kind of recipes are the perfect choice when life’s get hectic. It’s definitely starting to get hectic here. More so starting next week since it’s already back-to-school. And this dish only needs a few ingredients. Gotta love dishes with only a few ingredients needed – saves me money and saves me time in preparing too.
Quiche is one of those dishes that you can make simple or elaborate. You can either choose to only have vegetables in it or you can add meat too if you desire. What made me chose this one is because of the spinach and tomatoes – two of my favorites. And let’s not forget the cheese. Both the hubs and I love any kind of cheese. So this dish is definitely right up our alley.
