Mexican Food is one of the few cuisines that the three of us love and one of the many foods that we could eat everyday. We have a favorite Mexican restaurant here in the city that we go to whenever we crave for this cuisine. Other than that, we have a simple recipe for tacos and nachos that we always prepare here at home. It’s one of our favorites to snack on or sometimes even have for lunch or dinner when life gets a little hectic.
With Cinco de Mayo a week away from today, I decided to browse for recipes online and round some ideas up. For a change, I want to prepare a different Mexican food this time other than just our own version of tacos or nachos. And since it’s Cinco de Mayo day, I think it’s just perfect to choose five recipes that I think would be really delicious.
Here’s the five Cinco de Mayo recipes that I think not only look delish, but I have no doubt they truly are delicious. Look at that! Don’t they look enticing? I’m getting hungry just looking at them and thinking about munching on ’em. 🙂 My husband and son are going to thank me for this, for sure. I’ll certainly not prepare all of them on Cinco de Mayo because there’s only the three of us. I would if we were going to have a party. LOL. But I haven’t decided yet which one I’m going to make first. Maybe I’ll let my boys decide. Hmm, I think that would be a great idea!

Oh yes, indeed I love Mexican food! We eat it about three times a week! Maybe too often lol. I would never pass it up if it were offered! We also visit MANY local Mexican restaurants and I am proud of my enchiladas that I make at home.
We are not celebrating Cinco De Mayo per say but we may go out to eat at one of our favorite places on the 5th!
